Easy Creamy Baked Chickpeas

1 can canned chickpeas
1 small onion, diced
4 cloves garlic, minced
1 tsp dried parsley
2 tbsp oil
2 triangles Laughing Cow garlic & herb cream cheese
3/4 cup grated cheddar cheese
Directions
- Rinse and drain the Chickpeas. Dice the onion.
- Spray an 8″x8″ baking dish with no-stick cooking spray. Add drained chickpeas, dried parsley, fresh garlic, diced onions, and oil into baking dish and stir to combine.
- Bake at 375° for 40 minutes, stirring halfway.
- Add garlic and herb cream cheese to baking dish and stir until cream cheese has melted. Sprinkle the cheddar cheese on top. Return to over for another 15 minutes, then broil on low for 3 minutes to brown the cheddar.
Notes
- Store in the refrigerator. Reheats easily in the microwave.
