Quinoa Jalapeno Poppers (with TAME version)

2-1/4 cups cooked quinoa
1 cup finely chopped yellow onion
1/2 cup chopped jalapeno peppers, or TAMED jalapeno peppers if you prefer milder poppers
2 garlic cloves, minced
2 eggs, lightly beaten
2 tablespoons cream cheese, softened
1-1/2 cups shredded Monterey Jack Cheese
Directions
- Preheat oven to 350°. Spray 12-cup metal muffin tin with cooking spray
- Combine all ingredients
- Fill non-stick, teflon, or aluminum muffin cups to the rim with mixture.
- Bake at 350° for 20-25 minutes, then broil on low for 3 additional minutes to get a nice golden brown on top.
- Let cool completely before removing from muffin tin

- Most grocery stores carry jars of sliced jalapenos and for those who prefer milder poppers, “tamed” sliced jalapenos. Mezzetta and Jeff’s Garden make wonderful sliced, tamed jalapeno peppers and there are others as well. Both brands are also available at Amazon.com.
- Your poppers will turn out crispy and light brown on the top if you use a metal muffin tin. Silicone muffin tins don’t lend themselves to this recipe.
