Restaurants all have their own vibe – from my favorite Day of the Dead themed Mexican restaurant, to the Asian-Inspired décor on the local Thai place. I automatically associate every Italian Restaurant with warm, cozy, family, red wine, mouth-watering smells, and friendly people. That’s the definition of comfort and this simple, easy recipe is yummy and versatile dish that stands on it’s own and/or many variations.

To transform this buttery, garlicky comfort food into a higher-protein meal, we’ll use chickpea pasta instead of traditional pasta. Cooking with chickpea pasta can increase the protein content of this dish by as much as 50%! Best of all, it tastes just as good!


To make this delicious dish, grab a medium stockpot and cook the pasta according to the package instructions. Once it’s done, reserve about a cup of pasta water for later, drain the pasta, and set it aside.
In the empty pot, add two tablespoons of butter and sauté the garlic. Then, return the pasta to the pot, add the remaining two tablespoons of butter, grated Parmesan, salt, and pepper. Use large kitchen tongs to toss the pasta until it is evenly coated with the sauce. If needed, add some or all of the reserved pasta water to help everything blend together.


Once everything is well combined and the pasta is coated, add the chopped parsley, stir a few more times, and serve! It’s that simple.

8 oz. package Chickpea Pasta
4 tbsp butter
2 cloves garlic, minced
1/2 cup grated Parmesan
1/4 cup chopped parsley
Salt and Pepper to taste
Directions
- Cook pasta according to package directions and drain, reserving 1/2 cup past water
- Reduce temp to low and begin melting 2 tbsp butter in same pot as pasta, stirring often to make sure it does not burn.
- Add garlic to pot and saute lightly
- Add warm pasta back to the pot and add remaining butter. Use kitchen tongs to toss until pasta is thoroughly coated, adding reserved pasta water if needed to make a thick sauce.
- Remove from heat, toss in Parmesan and Parsley, salt and pepper to taste. Mix well and serve.
