My name is Rebecca Poling. As a vegetarian and post-bariatric patient, I face the daily challenge of getting enough protein. I didn’t learn to cook as a child – certainly nothing more than a pot of spaghetti or a pan of brownies. As a busy adult in a large metro area, I relied on fast food, frozen meals, and takeout. It wasn’t until we moved to rural Northern Arizona a few years ago that I began to explore cooking.

At first, I cooked periodically whenever I had the time or inclination, but after my bariatric surgery, I quickly realized I needed to make cooking a priority. Initially, I had hoped to simply add high-protein shakes or yogurt to my diet. But with a goal of 80 grams of protein a day, the protein shakes and powders got old very quickly. Northern Arizona’s local diners and small-town cafés serve great food, but they don’t offer much in the way of high-protein vegetarian meals.

I knew I needed to get creative, learn about nutrition, and teach myself cooking. Today I work hard to create meals that are not only protein-optimized and beginner-friendly but also flavorful and enjoyable.

Through this blog, you’ll find a growing collection of recipes featuring my favorite protein-rich ingredients, such as cottage cheese, quinoa, old-fashioned oats, Greek yogurt, protein powder, chickpeas, edamame, tofu, nutritional yeast flakes, and peanut butter. What you won’t find here are recipes that take hours just to prep (life’s too short!), recipes that require advanced techniques, recipes that require expensive, hard to find ingredients, or recipes that can’t be modified to suite your personal tastes.

Right out of school, I jumped head on into the life of corporate America in a large metro area, toiling away at a career in banking, finance, and real estate. I was good at it, but it never brought me much joy.
Looking for something a bit more fulfilling, I set out on my own offering bookkeeping services to small businesses, realtors, and lawyers. That in turn led me to offer specialized bookkeeping for nonprofit organizations, and eventually I had the opportunity to switch my career to the animal welfare industry (where my heart was all along).
I held a variety of roles in animal shelters and rescue groups over the years, using evolving technology to save animals – websites, social media, marketing, special events and more.
With fundraising being essential for nearly any nonprofit, I worked alongside experts and mentors, combining my industry knowledge and communications skills to become a successful fundraiser (most often referred to as a development director) and was able top help dozens of deserving nonprofits raise money to fulfill their missions.
Life is simpler now. I have the time to explore my passions – photography and writing – and develop new ones – cooking, pickleball, and jigsaw puzzles are my new favorites. My husband and I are blessed to live in an amazing community with wonderful neighbors, gorgeous weather and breathtaking scenery.

We share our home with a cat. Her name is Pria and you’ll likely get to see her in my posts from time to time, as I can’t resist sneaking a pic or two of her in from time to time. For those wondering, no she doesn’t like to cook nor does she get on the kitchen counters.
